I'm cooking an 8lb butt for a family get together Friday evening and was wondering if I could shave a little time off the cook by increasing the temp to say 300, would doing so make a huge difference in the final product, even though I will still pull at 200 internal temp?....work precludes me from doing a long lo & slo Thursday into Friday
