Substitute for white wine

We're trying out a turkey for the first time on the egg, sounds like mad max is the way to go, but what can we substitute for the white wine? Can we omit it? Is it better to brine it? It's a 16 lb bird. And is thawed. We'll be serving it for lunch tomorrow. We'll take any tips you have! Thanks

You can omit it.
Max doesn't brine his Turkey, nor do I.. Brining is a personal choice. -

You can use chicken stock, beer, 50/50 apple juice and water or 10% vinegar to 90% water. Don't know if Uncle Max would approve.

use apple juice or apple cider to pour over the bird. .. as for the gravy, just skip that step and go straight to the crud and stock. .. .

Good, glad we don't need to brine. Now since I just looked at the recipe today... I don't have the fresh herbs on hand. I have a few dried herbs on hand. What do I do?

Typically, you will achieve the same flavor intensity with half the amount of dried herbs as fresh herbs. Sounds backwards, but it's true.

I don't know about the 10% vinegar/90% water. That sounds like really cheap wine that has gone bad. Let's ask Egret what he thinks about this.
