orange roughy suggestions?

Got some orange roughy filets ... any suggestions on how to cook .. temp, direct vs indirect, approx time, etc?

Yes! It's great... oil the fillet with canola oil and season with lemon juice and your favorite dizzy pig rub. Cook on aluminum foil for grills ( small holes punched into it) and save yourself a lot of trouble. Cook direct over 300º Egg (using foil) or indirect without foil for 4 minutes per side, checking often. Fish is done when it flakes with a fork. It's also geat in a foil pouch with butter, lemon and small cut up veggies such as squash or zucchini and a little onion.

That eggs real nice a number of ways. Some time try it blackened. Good eats indeed.

I plank 'em. Alder is my preference. Soak it an hour, place fish on plank skin side down. Salt, pepper, whatever rub u like ( I use Garam masala), brush with oil, cover with thinly sliced lemons. Grill direct at 400 to internal temp of 145. Serve with a dollop of your favorite compound butter over jasmine rice.

I do mine on cedar plank at 350 for 10 min. A little old bay seasoning on the fillet.
