I had a great cook on Thanksgiving, but the 20lb bird cooked in about 3 hours instead of the 5 I was planning. Still turned out fantastic but I think the temp gauge on the egg is off. How do I recalibrate it?

Water boils at 212 d's at sea level. Boil a pot of water, with a glove on dip the tip into the water. See what temp. the red indicator needle goes to. Adj. the small nut on the rear of the thermo. up / down to 212.
If you are not at sea level Google for water boiling temp in your area. Also those instructions came with your egg if you bought one new, if not see your egg dealer. -
Miles - I use the retainer clip and simply clip the thermo to the pan. Keeps my hands safe and free for sippin some adult beverages.
