Buffalo "Stuff" ...

Today was a rainy fall day that called for comfort food. Erin grew up with "Stuff" which we all had some form of in our child hood. Basically mix in all the basics that you like and cook. We picked up some Buffalo chuck roast from Whole Foods and ground it up using the Kitchen Aid. Browned the Buffalo, added some onions, potatoes and corn and let everything cook. Had the large set up for about 400 direct. Took about 15 minutes total ... had the lid open often to stir things up. Seasoned with some season salt and a few other spices .... came out pretty tasty.
This was our first experiment with buffalo, but plan on doing many more in the near future. Any good buffalo suggestion?
Freshly ground buffalo and all other ingredients for "Stuff"
Everything in ... after browning the meat
Off and ready to serve ... Buffalo Stuff.

Know Buffalo can get very dry if cooked like beef. Your's looks great. Would only suggest a larger portion and an invite.
