My uncle sent me two hind quarters today, and I have never cooked any before. I know that it is very lean, and will dry out easily, but i don't know what temp. to cook at, for how long , or wat internal temp to achieve. Any suggestions will be appreciated.

<p />spineyone:[p]Cook as you would a leg of lamb, about 350 dome and an internal of 120 to 130 with about a fifteen minute covered rest depending on your desired level of doneness. 120 with rest will equal closer to rare while 130 with rest will be more to a medium result.[p]Pictured is a venison rib roast.
