First, good luck to all in Atlanta, hope you have a great time.
I've got my first multiple butt cook on. 12 hours in with internals at 181 and 6 hours left to serve time so I'm good there. Here is the question.
Dome is calibrated, Mavrick was checked.
I'm getting a wide variation between the dome therm and the grate probe. The variation is not constant but is swinging. Last check probe at 257 dome at 200. Earlier it was 230 dome and 207 probe.
I've got a breeze blowing in 45 degree weather hitting the dome therm. I couldn't find the grate probe clip and it is laying on the metal.
Any ideas? As of now I'm relying on the dome and adjusting accordingly.

One piece of advice is do as little adjusting as possible. At 181 the plateau is pretty much over and there is very little difference a slightly higher or lower temperature will do to them. Sounds like you are going perfectly timewise. Pretty much time to make sure the foil, cooler and towels are ready, it doesn't take long from the low 180s to done.
