Stuffed pork loin and cedar planked mashed potatoe

It sure took a long time to prep but this pork loin was incredible.
I stuffed everything but the kitchen sink into these puppies. Stuffing consisted of many ingredients but what topped it off was Todd's Original DIRT my buddy
Mike B sent me. Oh and the stuffed potatoes disappeared as soon as I put them on the table.

Hi BayouMark
I boiled the potatoes with chopped onions and cloves of garlic. When ready I mashed and mixed in some butter, jelapenoes, more onion, sausage, mushrooms, bacon and put in the fridge for about 3 hours. When the pork loin was reaching 140 internally I put the taders on a soaked cedar plank, hollowed out the middle and stuffed with cheese of your choice and packed by hand to seal. Threw the plank on the egg for about 30 minutes or until the cheese started to ooze out the sides.
I was in one of those moods and was throwing anything I could find in this dish to step it up a bit.
I would definately do it again.
