Homemade Porcini Mushroom Rub

I ground some chuck roast for burgers this weekend & wanted something different for seasoning. Being a humongous fungus fan, I put dried porcini mushrooms, salt, pepper, cayenne, garlic & onion powders into the coffee grinder, then onto a couple of the burgers. Dale (Woodbutcher) & his daughter dropped by for lunch on Saturday (see action shot of Dale’s first ever taste of La Bomba below, note the smile
), & in all the excitement I forgot to get the end shot of the burger, but it was tasty, subtle, just cheese, no condiments, I loved it:






I liked them so much I made a second batch on Sunday:

bill, I wish I could take credit for this one, but there are porcini powders on the market as far as I know, as far as this particular rub, it was born as a result of wanting mushrooms on my burger, having no mushrooms, & living in a house with a family that does not care for the fungi (translation we never have them unless I can remember to specifically request them on shopping day :laugh: ); I had this pouch of dried porcinis courtesy Little Steven, it was tucked into the last gross of La Bomba he sent me, & turned out to be a spectacular substitute for fresh mushoomshappy in the hut

This store has many great oils and vinegars, however the porcini oil is to die for on beef or in a little pasta.

i like that, i really like dried mushrooms, sometimes even better than fresh ones. i could sneak that into things that the shroom haters are eating and see if they really like them or not
