so i've made it pretty clear about my general feelings about most veggies over the years, and about squash in particular. .. and i wasn't too thrilled about having to cook up a squash for the iron chef comp yesterday. ..ok, most of my griping was in good fun, but i still didn't like the damn things. ...but then i figured i'd try doing a spaghetti squash, cause i knew it would give me the texture i wanted for the dish i wanted to do (the stuffed boneless chicken thighs. .. well, i got the spaghetti squash, halved it, removed the seeds, brushed it heavilly with olive oil, then put in the egg direct at around 400 degrees. ..no extra wood or anything. . .started it open sides up so it wouldn't burn on the "meaty" side and so the husk would protect the meat since we weren't allowed to use plate setters or any heat barriers. ...now, i didn't season it all, no rubs, salt or pepper, nothing!! just the olive oil. .. .after about 30 minutes, i turned them over and went 'meat' side down for about 30 minutes so that it would brown up a little. ...30 minutes later i turned it over again and let it go another 30 - 40 minutes till the meat was fork tender. ....removed them, let them cool a little and then that 'spaghetti' just came right out of the husk with a fork as easy as could be. ...

now here is my confession. ..i went to take a little taste just to see what it was like and damned if it wasn't . ... DELICIOUS. ...it had this fantastic roasted flavor to it from the egg. ..not smokey as i had a nice clean fire going. ..and not like any other squash i'd ever tasted before. .. .not only was it good in the chicken rolls, but we had the rest of it as a side dish, just re-heated in a pan with a little extra oil,nothing more. .. .wife loved it too, said "you can do this again on the egg!!!(words i seldom hear from her) .. .

so there you have it. ..i ate the spaghetti squash and i loved it. ...must have been the magic of the egg yet again!!
