ATTENTION - A MAJOR CONFESSION!!!

so i've made it pretty clear about my general feelings about most veggies over the years, and about squash in particular. .. and i wasn't too thrilled about having to cook up a squash for the iron chef comp yesterday. ..ok, most of my griping was in good fun, but i still didn't like the damn things. ...but then i figured i'd try doing a spaghetti squash, cause i knew it would give me the texture i wanted for the dish i wanted to do (the stuffed boneless chicken thighs. .. well, i got the spaghetti squash, halved it, removed the seeds, brushed it heavilly with olive oil, then put in the egg direct at around 400 degrees. ..no extra wood or anything. . .started it open sides up so it wouldn't burn on the "meaty" side and so the husk would protect the meat since we weren't allowed to use plate setters or any heat barriers. ...now, i didn't season it all, no rubs, salt or pepper, nothing!! just the olive oil. .. .after about 30 minutes, i turned them over and went 'meat' side down for about 30 minutes so that it would brown up a little. ...30 minutes later i turned it over again and let it go another 30 - 40 minutes till the meat was fork tender. ....removed them, let them cool a little and then that 'spaghetti' just came right out of the husk with a fork as easy as could be. ...
now here is my confession. ..i went to take a little taste just to see what it was like and damned if it wasn't . ... DELICIOUS. ...it had this fantastic roasted flavor to it from the egg. ..not smokey as i had a nice clean fire going. ..and not like any other squash i'd ever tasted before. .. .not only was it good in the chicken rolls, but we had the rest of it as a side dish, just re-heated in a pan with a little extra oil, nothing more. .. .wife loved it too, said "you can do this again on the egg!!!(words i seldom hear from her) .. .

so there you have it. ..i ate the spaghetti squash and i loved it. ...must have been the magic of the egg yet again!!

I LOVE doing any squash on the egg. As you said the egg creates perfection with that veggie!Molly

Awesome of you to embrace the challenge Max. I learned a thing or two yesterday also. I hate to use such a cliche but I think we all had to "think outside the box", which can only be good.

I have sort of followed a moto of, Just because you can doesn't mean you should.
When I saw the ingredients, my thoughts were - I think I hate squash too.
OK, yes it looks good plated, now I am hearing it even tastes good without 'doctoring' or having something else overpower the flavor.
One last thought, I wonder if squash is supposed to be healthy.
It seems I am always told I have to eat something that tastes bad because it is healthy.
Your other cooks are pretty darn good so... I guess I will give this a try and see if I still really hate squash.
This better not be a trick to up the squash stock Max.
Not even sure if our store even sells squash. I am more of a meat isle kind of person.

Max, I like squash and thought the spaghetti squash on the egg was delicious. I think most people would like it, the little bit of char on there made it taste really good.
I'm glad you liked it - now what else you gonna make with it, huh?

Careful Max, your beginning to sound like a convert! What's going to be next? Cauliflower? Brussels Sprouts? Collard greens? or Asparagus?
My mother was able to turn almost any veggie into road kill, I still avoid them.

remember, this is the SPAGHETTI squash. . ..not the regular stuff. .. its really different, both in texture and taste. ..so don't be fooled by your run of the mill butternut or other types. .. geez, reading all these responses you'd think i'd suddenly become a vegin or something. ... holy cow, i still HATE brocolli, sprouts, okra (you can have all of it you want lawn ranger!!), tofu, lima beans, spinach most ways, kale, collard greens, and most especially those little turdy brussels sprouts!!! . .. and a pox on those real PETA people!!!!
-
ok, before smokey has a chance to post this, i might as well. ...even when i'm in touch with with my feminine side, i'm still gonna eat my steak and taters!!!! you boys don't have to worry about me giving up my membership in the dave barry official 'guys' club .. .
