Tonight's cook was a chunk of tenderloin. Seared, rested, roasted. The brew: Black & Tan. Pulled when center reached 120°. Some medium slices on the ends for the wife, some med rare toward the center for the carnivores. Used mesquite for smoke. Even have a few slices for tomorrow.
