Wife is on call so she won't be home till a little later than usual. Why go out to eat when you can make better at home? Picked up a couple racks of baby backs this morning. Slathered then with some yellow mustard and sprinkled em with Dizzy Dust. Just put em on the Egg.... should be ready in time for a really nice dinner tonight. My mouth is already watering!!!

Sounds good, I need to get out to Costco for some BB's being as I didn't have very good luck with my spare's.

I'm cooking some twice baked potatoes for the side. As a matter of fact, just took em out the oven so they can cool a bit before I finish preparing them. Figure wife might want something green too, and apparently the chives that I mix into the potatoes don't count, so perhaps I will make a simple spinach salad.
Ribs are about half way done... meat is just barely starting to pull back from the end of the bone. Smoke has been dead on 240 for the past 3 hours. Spritzing them down with apple juice every hour or so. Last time I checked... I resisted the urge for a small piece to fall off the end of one of the racks. Who knows, maybe it will fall off when I check next hour? A man can only resist for so long... -
Doing it with a platesetter in the legs up position. I was planning to buy one of those adjustable rigs or a spider, haven't decided which to buy yet though... damn it... I should just buy em all!!! Why didn't I think of that earlier.

After reading this, and doing ten racks of baby backs without the Texas Crutch, I am never letting any foil get within ten feet of my ribs.
I did find that I can get by with less rub cooking with no foil. The first cook had the rub overpowering the ribs a bit, because it doesn't get washed off during the steaming phase.

5 hour mark... sauce on. I went with a mixture of Stubbs Original and honey. A little bit sweet... just the way I like it.

All in all, best ribs I have ever cooked. I really like the spice of the Dizzy Dust. The mixture of Stubbs and honey was perfect. Perhaps they were cooked a bit too long. I think I was sort of realizing that at the 5 hour mark when I hadn't sauced them yet. Very successful and family is happy. I know this b/c my 5 year old daughter said "Daddy... this is the best chicken I have ever had!!!" (She thinks all meat is chicken). -
