tarheelfoley,[p]Here are some ideas that might help you come up with a method. [p]<FONT SIZE="3">Tenderloins</FONT>[p]Enjoy and have fun. You might want to try 1/3 or 1/2 of the tenderloin to test your method. At $100 a loin - you want perfection. I prefer searing it with salt and pepper (salt around here means sea salt or kosher salt).[p]Tim

I was lucky and got to cook by Slo-Mo and Red at Eggtoberfest,the taste and texture was great,i think the tenderloin is the only cut of beef you can cook that low,Below is Slo-M0 and his tenderloin.

Thanks for reminding us of that great recipe from SloMo. Sounds like one that needs to go up pretty high on my list. It sure looks awfully pretty on the egg there. [p]And thanks SloMo for shring that recipe. Don't know why I haven't seen it til now. It might be time to go thru all the great recipes we have access to again, to see what else I have been missing.[p]NB
