It means Tail of Bull.

I browned them up in olive oil with S & P.

Removed them from pan and sauteed up some onions, carrots, celery and mushrooms, thyme, garlic (5 cloves)

Added in white wine and bay leaf, then a can of diced tomatoes

Egged at 250 dome for 3 hours, til the meat was falling off the bone. I made a camelized onion and potatoe tart in an 8 inch CI.
