Rabo de Toro - Oxtails

It means Tail of Bull.
I browned them up in olive oil with S & P.

Removed them from pan and sauteed up some onions, carrots, celery and mushrooms, thyme, garlic (5 cloves)

Added in white wine and bay leaf, then a can of diced tomatoes

Egged at 250 dome for 3 hours, til the meat was falling off the bone. I made a camelized onion and potatoe tart in an 8 inch CI.

Finished oxtails - the photo doesn't do it justice.

The finished potoatoes - here's the recipe:

Another fun cook.

-
i would think beef short ribs could be done exactly the same way ... . same way for shanks. .. .

Max, it looks like its almost the same recipe as yours. I think it would be a good way to do the short ribs too.

I first tried them in Spain in a tapas bar and I was hooked. I duplicated the recipe when I got home. They are easy and good.
