Getting ready to trim and mow the lawn for the 2nd time. Since I fertilized it's really growing. When I'm done I'll be ready for a cold beer and a few of these beauties.
Made some spiced cream cheese with cajun spices and Tuong Ot Sriracha and sliced up the last of my cheddar/chili flavored sausages to stuff. Topped each with a little bacon and dusted. Indirect at 275*F and some apple wood smoke. Can't wait!

That looks good. How did you clean out the peppers. I have a rack similar to yours. I had a hard time getting the seeds and spine out to try to make it a little less hot.

Use a teaspoon (or better yet, a grapefruit spoon) to scoop out the seeds & all... calls for a lot less ice cream later on! 8 - )

This is my "secret" pepper coring tool. It's actually a Tupperware tool meant for coring lettuce but the shape is perfect to get down into the pepper and clean it out.
And the yardwork will have to wait. They are "done" enough for me. -
JoJo,I have used small banana peppers instesd of jalepenos.Works pretty good.
