Want to share this as it was a good one....Duck with seasoning: clementines, sherry, orange marmelade, S&P, hoisin, applied at various stages...s&p duck, squeeze clementines leaving juices seperate, with skins to stuff in Duck..cooked indirect over drip plane with chkn stock..roasted took off, cut in sections to broil. applied hoisin over skin and prepped sauce glaze for finish...sherry, juice of clementine, sml amount orange marmelade
