First Mate's Stuffed Artichokes

Four baseball sized artichokes

Remove stem to make the bottom flat trim about 1/4 inch from the tip of the large leaves, and slice off the whole tip.

Soak in lemon/water solution while preparing your favorite meatball mix.

Drain & rinse artichokes, stuff as much meatball mix beween as many leaves as you can.

Place 4 upright plus loose stems in sauce pan. Pour 28oz. bottle prepared traditional Spaghetti sauce, better still make your own.

Cook covered on med-low heat to simmer for about 3 hours or until leafs pull out easily. It is a good idea to give each one a half a turn in the pan to insure even cooking about half way through the cook.
