Anyone here grill Bison more often then beef? Is it a sure substitution that can one can stick too to replace beef for its health benefits?
I had ground bison a few weeks ago and was awesome. Looking to rid the steer for some buffalo and Bambie. I know venison is good, but want to add bison if u folks feel it's worth it. I mean those of you in the know that substituting rice cakes from Doritos just doesnt cut it...

I like to use Bison, and find the flavor to be very good. But I really have to watch over it carefully to make sure that it does not get over cooked and dry. I tend to use temps of around 325F for Bison burgers and steaks.

We often grill bison burgers instead of regular beef. I find they are generally just as tasty and usually leaner. Other friends have tried some brands, though, which they say were not as good as some. I think it depends on the bison ranch. If you can find steaks from the same supplier as the ground you enjoyed, you should be good to go. They key is the pasture/grassfed nature of the animal. That's one of the primary contributors to the healthfulness of bison. I believe most if not all bison are only pasture/grass-fed, never corn-fed or grain-finished.
Now, I have not cooked bison steaks or roasts.
We do, however, usually grill locally raised grassfed beef steaks and they are incredible. We may be lucky in our local farm, they primarily raise the beef for themselves with a small clientele. They only butcher a few "beef" as they call them, per year.
Some people claim grass-fed taste different. We noticed it (more beefy-ness) in the first burgers we cooked, but not thereafter and definitely not on the flank steaks we cooked. We are confirmed grass-fed converts for our steak and buy either bison or grass-fed beef for ground pretty much interchangeably.

We've been buying from WildIdeasbuffalo.com for many years and they have a great product. It's organic, grass fed, free range. You can call them anytime and Jill or her husband Dan will give you cooking tips and some great recipes.
