Timing Question

I am going to cook a 21# turkey this afternoon (1st whole one). Have been studying Max's method and realize the timing is off between the time I get home from work and go back tonight. I am guessing that if I bump temp. to 350-360, I can cut enough time off to get back to work with enough time to foil the bird for a lunch tomorrow.
Will this bump in temp truly affect the outcome of the bird?
