if you would happen to make too many pistachio lamb chops, freeze em and shallow fry when you are ready and serve with yogurt and dried mint leaves. :woohoo:

i learned it from 12 step at this year's afterparty...
it's basically:
-cut a frenched rack of lamb into individual chops
-dip in egg wash,
-then coat with 50/50 panko bread crumbs & finely chopped pistachios mixed with your favorite seasoning (s&p&dizzy pig)
-then smoke indirect for about an hour at 300-325. at least that's what i did... i'm not exactly sure how 12 step does it
these were in the fridge for a few days and then into the shallow oil in a dutch oven until nicely browned and heated through. -

He usually uses a skillet. I didn't see him cook them at the after party, but I thought he brought the skillet.
I am going to get him to NC as soon as I can. We'll have to try both version. Might end up turning in your version..
