Sauce question and spare ribs

The wife seems to think this isn't normal... so thought I'd ask the most reasonable group around about sauces. This is normal, right? It's not like they're all open. :laugh:

meanwhile, my first spare ribs are on (3 hours now), and seems like I need a bigger egg for just 2 racks, with all the "spare parts"

My friend, you are not only normal...you need more.....Considering how fast those bottles go...I'd say your inventories are runing quite low.......and we are not trying to save on working capital here.....I'd never allow my sauce supplies run lower than my wine's

unfortunately, in these desperate times, those sauces are more plentiful than that wines... my wine racks are looking rather bare recently.

You know, the last time I tried that it was some chili/lime flavor or something, and it was BAD... but indeed, it may be time to re-add the original to the collection.

Yeah - stick with the original. I make a Cholula compound butter that is FANTASTIC on a flash grilled skirt or hanger steak.
