What's your set up? What materials are you using? what temp? Someone here will set you right if you are doing something wrong.

I know a lot of people cut the jalepeno in half, stuff, then wrap in bacon. If this is what you did & the cheese leaked out, try just cutting the top off, scooping out the seeds with a pearing knife, then stuff, wrap, scewer & smoke, works every time (although it is a pain in the ass to do)

Drinking that cheap beer again! Nice looking ABT's though. I am afraid to ask what did you stuff them with.
I have visions cheese cake and muffins for some reason. Go figure!   :blink:SEE YOU IN FLORIDA, March 14th and 15th 2014 http://www.sunshinestateeggfest.com You must master temp, smoke, and time to achive moisture, taste, and texture! Visit www.bubbatim.com for BRISKET HELP -
Try using a jalepena holder so the pepper stays upright -
I'm still a "boat style fan" of cutting them in half. Instead of cutting the stem off, just take a sharp knife under the stem's "doily" and the cheese will melt and stay in place!
and they will look like these!

No, that is a summertime shot, thus the High Life, now it's "real beer" season, Sammy & whatnot. As for the stuffing, I do believe they were the Scrapple & Chedder ones, (Scrapple if you are not in the know, is PORK mush, I do believe this fulfills your meat requirements)happy in the hut

That is exactly what I did. I will give your way a try. It might be a pain is the ass but it can not be as bad as looking foward to a bge treat only to realize your efforts are not fit for the dogs! by the way where could I find the stand/holder you used.

Thanks will do. Where would I find that holder.

RRP, they look beautiful, but nothing leaked out, do you do them indirect withoug flipping to get that perfect color & finish on the bacon on top?happy in the hut

Don't I wish  but I have no plans of giving up this easily  :pinch: :pinch:

that is just a disposable foil pan, I cover it in foil to use it over & over & over..., along with metal scewers that rest on the edges of the pan, this way I can put the whole thing on the grid & do them indirect so the bacon doesn't get burned before the pepper is nice & cooked:
Here is a better picture of the setup:

Great lookin ABTs RRP. That' the way I do em. I use a melon scoop to get the seeds and membrane out. I have had the upright ones a few times that a friend does and find they are too hot for my taste because the membrane is too difficult to remove without "boating" them.

I get it all out with my ABT knife, the slight curve at the end allows it to scoop everything out effectively, but it is very time consuming:

My name is Brad, and I'm a food porn addict.
I can't take my eyes off it!! Everytime someone posts pics of ABTs, I start drooling. The craving for that hot/cheesy/smokey/meaty delight takes over all rational thought. The only solution is to feed my addiction again tonight, if I can wait that long... -
make sure you make enough they tend to be very popular
