Burnt Cornbread
Chris
Posts: 117
I just gave my first attempt at cornbread using one of the recipes previously suggested to me. I did it direct at 400-425 as suggested. The top part tasted good but I burned the bottom - despite only cooking it for 20 minutes.
Should I try again using an elevated grid? Or go indirect? I used a CI skillet.
Thanks!

Yep...said directly over the fire. I guess I should try indirect at the same temp?
-
DEFINITELY indirect at around 400-425, uncovered, until top is firm..be sure CI skillet is well oiled...
-
gotta go direct
I did cornbread at eggfest and used the platesetter legs up. Put the grid on the platesetter and then bake the cornbread.
Did you get the recipe from eggfest? -
if you have the platesetter in there, with the cornbread above it, you are indirect by definition, no?ed egli avea del cul fatto trombetta -Dante

Hi Gene. I think Chris meant he had his CI skillet on the grid directly over the fire. You used a platesetter to block the direct heat, which to me, means indirect.
Did I misunderstand your post??? -
I got the recipe from someone responding to my Jalepeno cornbread post from a few days ago.
I will try again today indirect. I don't have any Crisco...would a non-stick spray be ok? -
Yes, I was just telling how I do indirect cornbread. Legs up, etc.
I don't have a spider, woo, whatever else is out there. -
Yes, But it would be different with legs down . There would be mor eheat from the platesetter near the CI and it may still burn slighty on the egg (with legs down and CI on the platesetter.

I used butter instead of a spray on CI if no crisco avail.

i have my best luck baking inderect (no platesetter here as i use firebricks and pizza stones) and using a raised grid setup to get it closer to the dome.fukahwee maineyou can lead a fish to water but you can not make him drink it

Ok. It's just semantics. Tell Tania we said Hi. Mark
-
Will do, same with Thea please.
-
OK...Thanks everyone. I will try platesetter, legs up, on a raised grid. I will let you know how it turns out. This is for an office party on Friday, so I am glad a did a trial run yesterday.

Chris,
I am also doing cornbread for an office party on Friday. But I am too lazy to do a trial run. I'm doing it tonight. If it does not work out... no cornbread at the party!
What's the best way to reheat? Just nuke it? My options are microwave and toaster at work. -
make sure the egg and platesetter have been burned off recently. If the dome and platesetter have a grease build up, the cornbread will be very smokey and have a bitter after taste.
