Recomendations for an Eye of the Round

Hi I ended up with 2 eye of the rounds today. Was wondering if anyone had any recomendations on cooking them on the egg.

two words. .. PIT BEEF. .. .simply rub it up really good with dizzy pig cow lick or red eye express (red eye express is really good if you have it). ..set up you egg indirect at 375 degrees grid over inverted plate setter with a nice big hunk of hickory or oak. . . .throw the roast right on the grid. . .won't take more than an hour and a half or so to hit 125 internal. .. let it rest under foil for 15 - 20 minutes. ..its a tough hunk of cow, so the key is to really slice very very thin. . ."shave" it. . .. then serve it up on kaiser rolls with horse radish and/or bbq sauce and raw onions thats it. .. Pit beef. ..yummy, yummy in you tummy :woohoo: :woohoo:

As previously stated, slice VERY thin. Horseradish cheddar cheese is great on sammies.

if you have an electric deli slicer, that works best. ..fools that eye of the round into thinking its actually tender. .LOL

Agreed, it needs to be sliced very thin. When sliced thin, the flavor is great.

I have John Henrys Pecan, John Henrys sugar maple and Bad Byron’s Butt Rub On hand. I also make rubs on occasion. What would you think would be the best for these eyes? Also Have Hickory, Mesquite, Sugar Maple, Pecan and Apple woods that I could use for smoke

I love JH pecan rub but I prefer a more "pepper" vs sweet on the eye of round.

Yes, as I said I love JH pecan, just not on this hunk of muscle.

I'll sometimes pull at 100 internal and toss in the freezer for an hour then thru the slicer and finish in CI pan with onions and mushrooms or peppers for great Philly cheese steaks.
