I put 2 4.5 lb butts on this morning just after 8 CST
The egg has been steady at 250 - 260 but im only at an internal temp of 144 now at 3:30 Drip pan but no liquids in it. I hooked up the mav grid thermometer and im only getting 205 there. I'm thinking the dome thermometer is out of kilter, It's done this 3 other times. just recalibrated it about 2 weeks ago.
Should i crank up the dome to 270 or 280...or just leave it be....thanks

The Maverick can be out of calibration too.
The plateau can seem like it's taking forever and then all of a sudden it will start to quickly rise.

More than likely its the Maverick. Mine worked well for about a dozen uses then started crapping out. I just tossed it. -

I checked the mav (grid and food) plus the egg therm
2 weeks ago, the egg was off 25 degs. this has happened twice. I am checking the internals with both a mav and thermopen...they are the same...oh well ...live and learn...thanks for the input and help.
