    Busted Link- But I found the recipe out there on the interweb:


    Thanks go to Mrs Puj for her recipe from the EGGtoberfest 2002.

    It's a good recipe to follow up a lighter meal with, you can put it on to cook whilst you are eating the main course.

    Ingredients

    6 Apples - 3 Tart & 3 Sweet - Peeled & cut into wedges

    The Cake Batter
    1 Cup Plain Flour
    3/4 Cup Sugar
    2 Eggs
    1/2 Cup Melted Butter
    1 tsp Vanilla Extract
    1/2 tsp Cinnamon
    1/4 tsp Nutmeg
    1/4 tsp Allspice

    Additional ingredients for the skillet
    Butter & Cinnamon Sugar

    The Drizzle
    1/2 - 3/4 Shot Glass Dark Rum
    1 Cup Maple Syrup (proper stuff not the fake variety)

    Cooking Instructions

    In a 10" cast iron skillet (I used my dutch oven) smear the bottom & sides with butter
    Sprinkle bottom & sides with Cinnamon Sugar
    Arrange apple wedges in the skillet using all of the apples
    Mix all of the cake batter ingredients in a mixing bowl until smooth, tehn pour over the apples evenly
    Srinkle the top of the batter with Cinnamon Sugar

    The Drizzle Preparation
    Combine the rum & maple syrup in a pot to warm

    Baking Instructions

    Prepare your BBQ for indirect cooking (using either a plate setter or pizza stone)
    Pre-heat the BBQ to 425 DegF & let temperature stabilise for 15+ mins
    Place skillet in BBQ so that the airflow can circulate all around the skillet, might need to use firebricks or ceramic spacers in some BBQ's
    Bake the cake at 425 DegF for 40 - 50 mins
    Use a skewer to check that the cake is done (skewer will come out clean when the cake is done)

    Serving Instructions

    Flip the cake onto a platter & allow to coll for 20 mins
    Cut into individual pieces & pour the warm drizzle over the piece & serve
    Also serve with a dollop of icecream or cream if your health is not an issue!
