Ribeye supper with sides

First we started with two nice inch and a quarter ribeyes
Then I made a cauliflower casserole with parmesan and basil and cream
Next was some "cowboy style" pan bread
And now the finished product...
I got the EGG to 650* and put the steaks on for 2 minutes. Flipped them and go another 2 minutes...all this time with the cover closed. Take them off and let them rest for 20 minutes. Put them back on for 8 minutes and they're medium rare. We enjoyed them with some coconut custard I made but didn't photograph.

VERY nice crawdad!...Had a couple of nice prime cut ribeyes last night myself..(too lazy to take pix)..kinda my current favorite.. hard to beat the flavor of a well cooked ribeye! Those a bootiful!

Cauliflower casserole is just cauliflower cooked until just done...like you'd eat it at the table... then mash it up and add around 2 tablespoons of real butter, "some" cream, a good sprinkling of basil flakes and a little Tony's or Slap Ya Mama to it. I topped it with grated parmesan and put it on the grill for about 20 minutes. It's already cooked so you just need to heat it well and melt the cheese on top. Temp was about 400. Bread went on at the same time.

While the steaks were off the EGG, I closed it down so it would hit 400*. Then I put the steaks back on and set the vents to maintain 400.
