Mahi Mahi going on the egg..Cedar plank...Mahi Mahi marinated with Chardonay,EVOO, Dill, Salt, Pepper, Mango & Lemon.....400° Dome......145° Inside...
Aubergine parmegiana "au gratin"
....ENJOY!!
Loved the Cedar, Mahi Mahi , Mango & aubergine combination of flavours

Excellent presentation! Do you soak the cedar plank? Or do you cook with it dry? I still have to try "planking" something...

Hi there Mike,
Left them soaking overnight......put it on the grid for about 5 min. then turned it around so the hotter side faces up and placed the food on it. It is very important to let them soak inwater,,,,so the plank flavour impregnates the food mildly and doesn´t burn.....had my doubts at first with the cedar wood since it can be very strong....but it´s amizing how well it compliments fish....Saludos!!!!!!!!!! -
Another great looking cook. Fish with mango is getting to be a forum favorite. What is the parmegiana dish? Looks like a great compliment for the Mahi.

Its actually eggplant.
2 medium aubergines
3 cloves garlic, crushed
2 medium onions, chopped
2lb (1kg) fresh tomatoes (or 2 cans tinned tomatoes)
200 g chick peas (cooked or canned)
150g fresh parmesan, grated
1 tbsp olive oil
1/2 oz butter (optional, but tastes great)
3 sprigs of thyme leaves
handful of fresh basil
1 fresh mozarella, sliced (optional) for topping
1 tbsp sesame seeds (optional) for topping -
Great. I got some growing in the garden not. I love Eggplant parmeshion. Cant wait to try your recipe. Saved to favorits
