I just got my egg on Wednesday and have made a couple of short cooks but tonight is my first pork butt. I'm following Elder Wards Receipe so I was shooting for about 195 and over shot to about 250 and can't seem to cool back down below that without closing the dampers all the way, any suggestions? :huh:

Hope you enjoy your new egg. I cook my butts at 250, they come out great and it is pretty easy to keep it at 250. I pull when meat is at 200 wrap in double foil and a towel then put it in a cooler for up to 4 hours.

As mtg egger noted 250 will be fine. I think 195 for an Egg temp with pork butt is TOO low. I always use 250 degrees. I think you might have misread the instructions. 195 degrees is the temp of the pork butt to shoot for not the temp of the Egg.

Good luck with the cook--you've got the correct dome temp, for sure. I cook mine at 250 dome and remove the roasts at 195-200 internal.
