Sterelization Question

ok i know i can't spell but i was thinking how often do you sterelize your thermapen or other measuring instruments...


i mean if you stick a piece of chicken and it reads 135 and you fold your thermapen an put it back in your pocket and then go and stick it again and it reads done how steril is your thermapen???

    Good question. I'll wait patiently for some opinions.

    I know I do just as you described and I'm still here. And if I just happen to get a gut-cleaning bug I'll just let it run its course.

    I never sterilize mine. Just wash it real well with soap and water after using. Not sure why you're so concerned about this after seeing your small set-up earlier! :woohoo: :woohoo:
  • I do all the time but never thought about it. But then I wonder if it makes any difference as I never pull the chicken until the temp is a lot higher, just wondering if that kills the germs.

    I wipe with a paper towel during cooks then with a clorox wipe at the end.

    In many ways I'm a sanitation nut, but when it comes to probes inserted in meats I keep a cheap bottle of rubbing alcohol in the pantry and dip my probes, before drying them with a quick pull through a piece of paper towel which in essence is probably about as germ free as newspaper! Does my method work? I don't know but in my mind it does!

    This exact situation drives my Son-In-Law nuts. I cook and check, recheck without cleaning. I may go from one cook to another cook several days later and again maybe not clean but just wipe down. I would not think it is sterilized.

    I don’t think anyone is going to get food poisoning or salmonella poisoning from the thermometer probe either.

    When I am cooking for others I will try to remember to use a cleaning wipe when cooking as a courtesy to those folks.

    If one reads the more popular wipes and or spray’s available the ‘hard surface’ must be kept 'wet' for something like 10 minutes. Some of the more expensive industrial cleaners require a full 2 minutes ‘wet’. I would need to go re-check the instructions for the exact times.

  • What about the tongs you cook with. Do you place the raw meat on the grate with tongs, continue to use them throughout
    the cook and even serve with them at the table without washing?

    If you are not wearing a tank top, then under the arm is pretty good to. You can even hold ti there if your hands are needed for something else.

    Hay, we are talking about temp probes - no pop quizes.

    I usually don't take the tongs into the house. If they are dirty after a cook I will paper towel them down and once in a while use a wipe on them.

    Mostly I put them in the red hot lump for a short time. If the fire is about out I will paper towel them doen and put in the lump before beginning the next cook.

    With the Grate, I just wire brush down and pre-heat on the next cook.

    I guess if someday Mrs. GG posts saying I'm dead or have the Rocky Mountain Trots, I guess I will have to change my ways.

  • LOL. ..i'll tell you a story ... couple of years ago, my son had the flu and i couldn't find the medical thermometer, and i figured WTF, a thermo is a thermo, so i washed off the thermopen really good and stuck it under his armpit and got a nice instant read on him. ..he looked at me like i had three heads, but i was careful not to poke him with it. ...true story :lol:

    My girlfriend gives me the hardest time about this stuff, especially tongs. She grew up eating anything and everything raw anything doesn't scare her. I grew up with both parents being nurses, so I am a fanatic about cleaning things between raw and cooked stages. At very least I will usually stick my tongs under hot water for a second or down close to the fire for 5-10 seconds. As for the thermometer, I don't own a thermopen yet though my bday is coming up in two weeks... anyway the thermometer just got a good washing last week for the first time in months. Haven't died yet, so I guess my girlfriends theory works too.

    yea i am not the best at it from reading the responses everyone else seems to be but i am c couple ahead of you i do wash mine after every use but my logic is if the probe is 196 (pulled pork) then everything on the probe is 196 so isnt everything we are scared of dead at that temp :unsure:

    i place raw meat on the grate with plastic gloved hands throw them away then use another set of tongs to turn the meat then another set for the last turn and pull
