Chunk of bologna

I thought I'd try to smoke a chunk of bologna tonight. I just rubbed a bbq rub on it followed by EVOO and smoked at 280 for about 3 hrs. It was actually pretty good. I thought I saw some version of this here, but I don't know how they did it so I just winged it.

Good looking round steak FT. You with Memphis FD? I'm a Fire Investigator in Mobile but have a daughter in Memphis(Cordova). She told me they love smoked bologna up there. Haven't tried it yet but love a good old fried bologna and onion sandwich.

I'm with Bartlett Fire...been there almost 20 years. We love our bologna. If you know anything about Memphis there is a area of town called Frayser which used to be a nice neighborhood, now it's just the hood. Anyway fried bologna around here is called Frayser steak. :laugh:

Man I love a big slab of stick bolonie with a big chunk of chedder cheese. Did it develope a smoke ring like uncooked meat?
