Thanks for the earlier help on temps... these turned out great. Found a recipe I liked in Elizabeth Karmel's book (taming the flame), seemed right for a limited cook time (as I bought these at 4:30p and we ate at 8p). She rubs both sides with fresh lemons, squeezing the juice out, sits for 5 mins, then rubs/wraps for 20 mins, then indirect @ 325 grate level for 1.5-2hrs, saucing w/ 20mins left. I went nearly the full 2hrs and the meat fell off the bone and not overcooked. patting self on the back...woohoo :silly:

thanks- yeah I figured I'd stop with the pizzas and beef sandwiches and start figuring out this pork nonsense. Family downed it all, nuttin but bones now...

thanks again for the temp tip. Now that I think about it, the first 30 mins was much lower than 325 grate (350ish dome)...lets say the first 30 mins were 250-275 and really smoky- I used 3 chunks of hickory- then had it at 325 for the remaining 1.25 hrs I kept the lid closed until about 30-50 mins left. Other than that this recipe was simple and I think the lemon must have something to do with the tenderness. In Karmel's book she titles this "Bubba's Bunch Barbecued Baby Back Ribs" and says its a variation on ribs (cooked by Bubba's Bunch) that won a Memphis in May Patio Porkers contest.

The ribs look great. Like the others I always figured low and slow was all you could do with ribs. Guess not huh? Well I'll just keep tryin, mine have not quite been fallin off the bone like I like it.
