First pizza a total flop

I tried my first pizza today and did every thing wrong. First I used a box mix. Then it went down hill from there. Oh well lessons learned will make a better pizza next time.

    I made 3 pizzas Saturday for some friends. It was my first try and it worked well. I bought a box of Jiffy Mix btu decided to make my own dough. It was really kind of fun tossing and having the kids sauce it and cheese it. Made one pepoeroni, one sausage, and one goat cheese with roasted garlic, spinach and fresh tomato which I've copied from a local restaurant. Parchment paper worked great. Cooked between 650 & 700 and fried my gasket, but it didn't affect the turkey I did today for easter. Wish I'd taken pics.

    Don't fret about the gasket until you do another very-lo-'n-slo. My Medium is fried! Hard to tell there was once a gasket... but it still holds whatever temp I ask for.

    Not to worry -- otherwise, you could blow a gasket!

    You'll get better; I guarantee it. Then making pizzas will become one of your favorite things to do on an egg.

    Pizza is tough the first time, for sure. I've tried a few, but am still working on the finer points. I've also grilled some, which was fun and interesting. TNW has some good pizza grilling info on his site if you are interested.

    My favorite dough recipe so far is the original one Spin posted a long long long time ago when the eggcommunity started venturing down the pizza road. That is one mighty fine crust.

    I've used Martha white pizza crust in a bag plenty of times. Its okay but it makes a 'tougher' crust.

    It is really easy to toast the bottom. What did you do that turned out so wrong and maybe we can help you out.

    hang in there mark...my first few were bombs too..I had one that I ended up scooping off the egg and into a trash can rather than eat it!!...but once you get the hang of em..my guess it will be one of your fav eats..they are at my house!! :laugh: ;)

    I too have had some big problems in cooking the pizza.. Once you get the hang of it and have some good dough it starts to become one of the easiest thing to cook on the Egg. I wish you much better luck in the future. I am new to this site, but have been cooking on My egg for a while. Let me know if you need some help in the future. I may pass you on to one of the guru's, but I am desiring to become a GurU!! :lol:
  • Mistakes are good, that's how we learn. What exactly was wrong with your Pizza?

    I'm a big advocate of buying the pizza dough ready to go from one of the local pizza joints.

    The thing I have trouble with is the sauce. It's ok, certainly passable, but not great.

    Sometimes it's too smoky too. Not the flavor-enhancing kind of smoke, more like the this-tastes-like-it-was-cooked-on-a-pile-of-burning-yard-debris kind of smoke.
  • This has also happen to me. I now make sure I have no left over coals from a previous burn when I am cooking dough. It seems to work

    I havent had the 'bad smoke' problem yet...I sift through my lump and try to remove any old unburned chunks before I light...then I fire her up and let er burn between 400-500 for a good 30 mins while the stone gets good and hot and any leftovers from previous cooks seem to be burned out by then...so far anyway..that does not sound like a good flavor :sick: and bob I do several different sauces, a white roux, a bbq and a tomato based...the tomato based is my wife's and it's killer...send me an email reminder if you want and I'll send you the recipe..I don't have it written down yet but can get it from her... ;)
