Freezing Sauces

Any idea how an olive oil based sauce (raw) will freeze? Also a second sauce that has been cooked, includes the oil and anchovy? Details and pics of the sauce will be provided shortly. But for now, my recipe has made way more than I can eat and I think that these sauces are certainly worth saving if possible. Apparently they only keep for about 3 days in the fridge.

You can freeze olive oil safely, and you can freeze pesto safely (olive oil based), so I would say it really depends on what your other ingredients are.

Do you have a foodsaver? I picked up one from Costco earlier this year, and it came with some different sized canisters. I've put some food in there and vacuumed the containers out, and the food stayed good/fresh much longer than I had imagined it would. -

The green chimichurri is very pesto like, so it sounds like I will be fine there. The only part of the red that concerns me is the tuna and anchovy, but I assume it'll be fine too.
