Freezing Sauces

Any idea how an olive oil based sauce (raw) will freeze? Also a second sauce that has been cooked, includes the oil and anchovy? Details and pics of the sauce will be provided shortly. But for now, my recipe has made way more than I can eat and I think that these sauces are certainly worth saving if possible. Apparently they only keep for about 3 days in the fridge.
