What is the 3-1-1 receipe for spare ribs? Temp? How long?

Actually a better way to say that is
3 hours in the smoke
1 hour in foil
UPTO one hour back in the smoke.
Whether you want to mess with removing the platesetter for that last hour is a personal preference. I personally don't want to be bothered with taking my hot egg apart. -
Lately I have been just doing the CWM method. I don't remove the platesetter either for the last hour, but he asked.
