Low Fat, Big Flavor, Chicken & Pineapple Kebabs!

These were by far the best chicken kebabs I have ever had/made. They were super easy, very low in fat and loaded with flavor! The only oil used was spray oil in the cast iron when I sauteed the veggies. Served with a little brown rice and then the Chipotle Raging River Pineapple Kebabs.
I had some Coconut Vinegar in the pantry and didn't know what to do with it, so I came up with a recipe that I will definitely be adding to my collection!
Marinated in coconut vinegar, lemon juice, garlic, chopped canned chipotle, ginger, oregano & Raging River for an hour, then skewered with the pineapple and grilled till they were done!

Problem is, I don't usually measure... so this is as close as I can get!
Ing.
2 large boneless chicken breasts, cubed
1/2 cored fresh pineapple cubed
3/4 cup Coconut Vinegar
1/4 cup Lemon Juice
2 Tbs. Minced Garlic
2 tsp. Crushed Ginger
1 tsp. dried oregano
1-2 tsp. Raging River/Shakin the Tree (I used both)
1 canned chipotle pepper in adobe sauce (just one pepper from the can diced)
Marinate chicken in everything except the Raging River/Shakin the Tree
I didn't marinate the pineapple... not sure how that would absorb the vinegar and what it would taste like.
Skewer the chicken and pineapple, then dust with rub.
Grill direct dome temp 375 until charred and chicken is cooked. I think it was 20 min. total. flipped once.
Enjoy.
The veggies were just chopped orange pepper, carrots, zucchini, onions and garlic and shakin the tree, sauteed till soft and tasty. -

Those look great! I've never heard of coconut vinegar. I'll have to look for it.

I found mine in an Asian Market, looked interesting so I bought it. Then it sat in the pantry till the other night and I'll be using it more often now!
