700 degree F sear for 2 minutes a side
yukon gold potato with dizzy pig swamp venom rub, butter, and garlic at 350 for 20 minutes

hmmmm... that's a good question. i haven't had sirloins in a long time. the flat iron is definately a different kind of steak. i'm gonna say i'll eat anything off the egg

Rick's Tropical Delight,[p]Great as always Rick. I have done dozens of flat irons and I love them. That one looks like a great cut. Did you trim it pre-cook? Was it a cryovac pack or a butcher hand trim?[p]The cryovac ones are usually thicker at one end.

krogers cryovac at $4.99/pound. just took it out the package, and coated with cow lick, then into the fire she went. "tzzzzzzzz"[p]then the crazy sparkies were set free!

For example, on this one the chunk you see at the bottom of the photo was trimmed from the thick end to make it more uniform. A lot of them I have to pound one end with a meat hammer to even them out a little.[p][p]Flat iron sparkies?[p][p][p]

those are actually lump fairies but i call em sparkies[p]i'd a just thrown it on the fire with no trim. i'm all about quick and easy. you can see part of mine was thinner than the rest on the cutting board shot.
