About to put some Beef ribs on...

I have 4 racks of beef ribs I'm about to put on. At what temp (dome) would y'all shoot for? I was thinking 200-225 for about 5-6 hours. I'm using mustard and seasoning. Please let me know what all I'm doing wrong (I'm sure a lot) as well as if the time and temp. sound right.

i'd do them at 250 dome indirect with plate setter. it'll be about 5-6 hours

Don't Egg me on, I cook beef ribs at 250* dome for 6 to 7 hours, no foil. If they are not cooked long enough to get rid of the fat they will taste greasy. Oh, and this is indirect and I don't buy beef ribs that have had the meat carved out between the bones. This cooking time is for meaty ribs.
