Eggcellent choice!
I have made them a few times with both beef and turkey ground.
My favorite is to brush the peppers with olive oil and blend tegether salt, pepper, fresh garlic, onion, parlsly.
Many possibilities and all I have done were quite tasty! But next time i'll do the melted cheese on top.

These babies had sauteed onions plus spicy browned Italian sausage as the meat. Peppers were par-boiled to soften them and then other additives including basil and oregano kicked the rice through the goal posts!
