Best chicken I had ever had.[p]That is, until we visited a friend's Jamaican joint down in Newport News. VA. Holy Moly! I've had a hankering to try a jerk chicken ever since.

    ok, mon... here's what's in the jerk marinade, but you'll have to figure out the proportions for yourself. try searching for jerk chicken in google and you'll find several recipes for jerk with similar ingredients...[p]i smoked this batch at 300 for about 50 minutes after marinading overnight. those pretzel containers from sam's work great for this.[p]scallions
    shallots
    garlic
    ginger
    chili pepper
    allspice
    black pepper
    cayenne pepper
    cinnamon
    nutmeg
    thyme
    salt
    dark brown sugar
    orange juice
    rice wine vinegar
    red wine vinegar
    soy sauce
    olive oil
    a couple other secret ingredients [p]*respect*

But am dying to try this next. Maybe I'll get my Mother-in-Law to contact "Bunny" and get his Jerk marinade recipe. I'm telling you, we call that Peruvian place "Crack Chciken" because there's nothing else in the world on your mind when you're eating it. But if Bunny's place were closer, it would be my favorite.[p]Enjoy the weekend! I don't know what it's like there. But it's glorious here in Baltimore!

    Rick's Tropical Delight,[p]Wow!!!! That looks sooooooooo good. You are absolutely the master of making me drool. That dish makes even a heavy-footed no-rhythm guy like me think he could gyrate fluidly to some reggae sounds. Thanks for the post.

    did these for about 3:30 at 250 indirect, then direct for a bit to try and get some good color. a little too much color on the one.[p]there, now i feel better.
