They were pressed and drained for a couple of hours.Brushed with a little oil, dredged in breadcrumbs and sprinkled with a lot of Chili powder.

was that you last week that schooled me re: draining eggplant?
thanks. best tip i got in a while for the egg. [p]my problem was that the first time i did eggplant, i didn't drain it, but it turned out perfect. ever since then i have been trying to do it and keep it from being soggy. maybe i had low temps that first cook, and it eventually dried out, i dunno.[p]but thanks again.

Yeah, that was me. Here's a pic of how we set it up. You really get a surprising amount of liquid out of them. It takes away a lot of bitternes too.
