    That would be awesome! Funny, I recognize the Blodgett name from auctions I've seen. I did a quick search on Peerless pizza ovens and see what you mean with the upper and lower ovens and how they can be split. That would be one sweet pizza oven!

    Peerless makes commercial baking equipment in just about every faction. They make anything from pizza ovens (very similar to Blodgett) to 2000# direct drive horizontal mixers. Good company, great industrial equipment (we have a #10 mixer from them, 1000# capacity)

    Long story short, I chickened out. Talked myself out of it basically.
     Cons: it was gigantic for what I needed, I figured at least 2 hours to preheat. I saw a post over on the pizza making forum and there’s a guy who did the same thing with a much smaller blodgett that was a double oven capable of cooking 2 20” pies at once. So that is the direction I currently want to go in, try and find that oven or a much smaller commercial pizza oven, I would be open to electric.
    pros: I could have got the lower unit for $230. That unit retails for 10k new so I am kicking my butt there, I could have made it on a stand played with it and sold it on marketplace for probably 2k who knows.

    It's good to know your limit and to be able to walk away. I've been guilty of wearing rose colored glasses a time or two. I'm sure you'll find something better suited for you down the road!
