Have had these dry brining in the fridge overnight, but they’re huge.  Easily 8 lbs each.  Is a 24 hr dry brine enough?!?!?

    hmmm, John, I havev never seen a turkey dressed out  that way. The butcher must have worked from the inside carving out the keel and probably the inner bones- all the while not puncturing the skin doing so! That is a work of art in my book!

    Given today is Thanksgiving you likely don't have the option for additional brine time. However additional brine time (up to another 24 hours) would be fine.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
