Pickle-brined fried chicken and coleslaw, with beignets for dessert

We don’t use our deep fryer often, so given my wife’s hankering for fried chicken today, we decided to make the most of the fresh oil and made donuts as well. In-laws were over.







Brined the chicken in leftover pickle juice for about six hours this morning. Coleslaw is from veggies (cabbage and carrots) gifted to us from a neighbour. Pickles were made yesterday from cucumbers gifted from another neighbour. Apple donuts featured apples from a neighbour.







Not pictured were a few molasses and oatmeal loaves of bread. After the meal, we distributed donuts and bread to the neighbours who had gifted us veggies - and to some who hadn’t.

Thanks a lot, @paolo. We are the lucky ones; we receive near daily deliveries of fresh fruit and vegetables from neighbours. Very kind of them!
Yep, the round things are the fritters. Highly recommend.We enjoy having a fryer but use it sparingly. This is because i) it’s not very healthy; and ii) the smell of the fryer lingers. When we do use it, we always set it up outside. -
I must conclude you live in very nice neighborhood then, and you do your fair share to keep it that way!
I also fry outside from time to time, just a camping stove and a pot with oil, mostly for fish which adds to the messy outcome. -
Very nice and so much safer than grease pot on your Egg.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
