Labor Day ribs and stuffed pork tenderloin.

DH wanted ribs and I wanted stuffed pork tenderloin for dinner so I compromised and am making both… tenderloin is stuffed with fermented preserved lemons, fresh garlic, green olives, anchovies, and feta cheese. Ribs will hit the XL in 30min. Comments

Used the extra anchovy oil on the outside of the tenderloins and covered with black pepper. No need to salt this recipe with what it is stuffed with…

Making a side of a knock off of JCody corn as a side. 6cups cut corn, 4oz cream cheese, 2 oz butter, 1 chopped red pepper, 2 chipotle chilies (dry),and two cups chicken broth.

I can’t complain that DH wanted ribs because this set up is amazing. The fermented lemon is an absolute delight in this pork tenderloin.

Looks like all cooked direct. Congrats on getting it all across the finish line together.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Yup. All direct on CI Cap. 225ish for the first couple hours on the ribs raised to 270°F for the tenderloins and to finish the ribs.

I may have said this before, but I like your focus on direct and the skill to manage the temps to get your great finishes. I need to get more engaged with the means to finish a cook in that manner. Although to be fair to me, I am the protein provider and only the occasional side provider.BeanHead said:Yup. I really feel the flavor develops better with direct and CI.
