new types (to me) number two - Beaver
At the mexican restaurant this evening the cooks Weber was using some big lump charcoal, not briquettes as expected. Looked around and saw this bag:

which is a new one for me. Sold at Canadian Tire. Will have to pick up a bag or two. About the same price a the FSC Maple Leaf at Canadian Tire. Since FSC can be hard to find in the winter, it will be good to have an option.

I finished my bag of Beaver this week. I don't know if I'll rush out to buy it again, but it was good lump, sort of middle of the road and average for my lights.
No real big lumps in the bag I had, but not a lot of dust/fragments at the bottom either - again, very average. Sizing is similar to what I've found in the BGE Oak/Hickory but a bit smaller.
The initial impression is fast and hot. Lighting was easy (two speedilights) and coals happened pretty fast. Usually when I close the dome I wait for a bit to reach 350 before adding the grills/plates/iron for the cook but with this lump I turned my back for only a moment and turned back to see the needle climbing already past 350 and most of the way to 400.
did I say "fast" - yeah, every single light with this lump acted the same way. Not one to stare into the gates of hell for too long I think that was I was seeing was a very fast spread of fire across the entire fire bowl matching my impressions of a fast light. The stuff just wants to burn.
Cooking over the lump was easy. Controlling the fire/temp was easy once the vents were dialed in. The flavour was not overpowering in smokiness, but there was certainly a good flavour imparted to the food.
The best fit I found for this lump was woking. The fast hot fire suited the fast hot wok cook perfectly with the protein (tofu) and veggies maintaining their flavours but with a nice smoky edge to them.
I'll likely keep a bag around for woking or other fast fire foods. Worth buying again, just won't rush out for it.~~
