Ostba Meat Slicer and French Dip

Life has been busy and I haven’t been around the forum much but I’ve still been cooking. I bought a meat slicer off of Amazon during the Prime sale and got a really good deal on a home slicer. Today it got its trial run and it did very well.
The plan was to cook an eye of round roast from Costco. I dry brined it yesterday and it sat in the fridge for about 16hrs. I pulled from the fridge to let it come up to room temp and seasoned it with pepper, garlic and onion powder. It cooked in the oven at 350 and I pulled it at 132 and wrapped it in foil. After about 30 min it went into the fridge to chill. The aus jus was beef stock with some beef better than bullion, carrots, onion and celery. This reduced by about half and it came out amazing. The wife said it was too rich, whatever that means. 😆
The sandwich was on a toasted French roll. The wife had Swiss and I had Gruyère cheese. I warmed the beef in the aus jus and then built the sandwich and served with a cup of the aus jus for dipping. Great sandwich. No pic of the plated sandwich as the pic was bad. I need to redo my kitchen lighting for food porn. Thanks

Nice cook!
what’s the plan with the slicer? Lunch meats? Cheeses? I ask because I was just telling my wife we could get one. Maybe slice some meats and cheeses, vacuum seal them and consume as needed. -
bravo! have noticed the eye of round at costco recently as well.

It primarily going to be used for making sliced meat. My daughter is a turkey fiend so I’m planning to smoke a couple of breasts and slice them up and vacuum seal.GrateEggspectations said:Nice cook!

A meat slicer is the thing to get for sandwiches. I'll grill a Tri-Tip in the LBGE and then, after a night in the fridge, slice it up. I like about 1.5 mm slices. Yummy! Especially on homemade sourdough.Somewhere on the Colorado Front Range

Thanks everyone. The beef didn’t survive the night. My son woke up that night and made 2 sandwiches for himself. 🤣XL BGE
